Countdown: Thanksgiving Pie #8
Several years ago we finally tried the recipe on the back of the Ritz Cracker box. I'm not sure why anyone would want to make this on a regular basis, because apples are so easy to find, but it definitely is a conversation starter. Believe it or not, it really does taste like apple pie, and I guess it does save you from all the peeling, coring, and slicing of preparing real apples.
Mock Apple Pie
2 cups water
1 cup sugar
2 tsp. cream of tartar
30 Ritz crackers
½ tsp cinnamon
1 Tbls lemon juice
pastry for one-crust pie
1 cup Ritz cracker crumbs
½ cup brown sugar
½ tsp cinnamon
¼ cup margarine, melted
Combine water, sugar and cream of tartar. Bring to a boil. Then add the 30 crackers and boil for 5 minutes. Stir in cinnamon and lemon juice and pour into pie crust. Combine remaining ingredients; sprinkle on top. Bake at 425° for 15 minutes. Turn oven down to 375° and bake an additional 15 minutes.
