Special Day

 Here's the reason we woke up at 3:00 AM last Saturday, only to spend hours in airports and airplanes.  Definitely worth the discomfort and lack of sleep!

It's too bad you really can't see how gorgeous the dress is.  Grandma C. is amazing!

Getting All Dressed Up

When we picked the weekend to fly to Utah, we didn't realize it was the same weekend as the church prom.  We felt badly about missing the chance to see Michelle all dressed up, but fortunately her youth leaders took some pictures.  Thanks for being so understanding!
Even the hair style needs to be more than ordinary.

The Art of Eating Pancakes

Waking up to a houseful of strangers is more palatable when they share their pancakes with you.

Note: The coconut pancakes (sprinkle some on the batter before flipping) were delicious, especially with apricot syrup.  Of course, the chocolate chip ones were favored by the boys.

The Pantry Re-Do

It's time to make a mess and start a new project.  Next up was the pantry.  I'm not sure who invented wire shelving, and I'm sure it serves a great purpose for some people, but I don't like it. Replacing it will be worth the piles on the kitchen counters for a while!
First step: set up the spare table and empty the shelves.
Second step: remove the old shelves.  Demolishing is always a fun part of the job!
Third step: repair the holes and prep for painting.
Fourth step: prime then paint.  No more ugly green, just the soft, matching gray.
Fifth step: buy some supplies.  We're trying poplar instead of pine (used in Michelle's closet) this time.
Last step (for now): cut out the pieces for the bottom shelf and try out your new "toy" - a router.  He did pretty well for a novice, although we did learn very quickly why the more expensive versions come with a mounting table!

Scholastic Achievement Banquet

I ran out of photo room on Blogger, so I'm a bit behind with posting.  However, I tried a "work around" so you can see what we've been up to lately.  I guess I should just bite the bullet and pay the $5!  Anyway, here you go -

Earlier this month Michelle was honored at the "34th Annual Palm Beach County Scholastic Achievement Dinner" for being in the top 1% of her graduating class.  It was a good excuse to get out the camera.
Notice the new shoes that actually fit, so she can walk in them without tripping!   They arrived in time to have a trial run before prom.
The banquet was held at The Breakers; here's the drive up to the hotel.
She didn't want to deal with parking herself or using the valet service, so I dropped her off and then picked up Wayne at work.
While she was busy (parents weren't invited), we took advantage of the opportunity to go out to dinner ourselves in downtown West Palm Beach.  We were by far the youngest diners at the restaurant, maybe because it was a weeknight, but comparing yourself to octogenarians is one way to feel young!  
Only one of the students is planning to attend Brigham Young University, and only one is majoring in Industrial Design.  Guess who?  Being unique is a good thing!
We know it was difficult changing schools just before your senior year.  We're glad you were able to be a good influence here as well.  We're proud of you.  Congratulations Princess!!!

WFMW - Menu - Week 12

Works for Me Wednesday
Being adaptable with menu planning

Time for another "Works for Me Wednesday" tip!  For the past three months I've been posting our dinner menu.  You may or may not have noticed that I put up the posts retroactively.  That's because invariably what I plan and what we actually have is not the same.  Don't get me wrong - making a menu plan is extremely valuable and I highly recommend it.  However, I've learned that it's also important to be flexible, and to be able to adapt to changing circumstances.

I thought I'd share the "before and after" for this week's menu plan to show how I made that work.  You'll notice there are several "leftover" days.  Most of the time I don't plan for those, yet I'm not going to let food go to waste.  That just makes life a little easier when dinner-time rolls around.  Often, though, I'll try to combine a couple days worth of leftovers into something new so we don't end up eating the same thing night after night after night.  (See the post on that here.)

Here's what was on the prepared menu:
Sunday - Chicken Marsala
Monday - Stacked Enchilada
Tuesday - Chicken Stroganoff
Wednesday - Beef Pot Pie
Thursday - Sausage and Beans with Cornbread
Friday - Cheeseburger Pizza
Saturday - Turkey Pannini
Lemon Chicken, Potatoes & Asparagus
Here's what we really had for dinner:
Sunday - invited to friend's house  - What a nice treat!
Monday - leftover pasta casserole - Still some sauce and noodles in the fridge from last week
Tuesday - Lemon Pepper Chicken and Potatoes - Still some lemon-flavored potatoes in the fridge from last week, and I wanted something that "went" with them, hence the lemon chicken
Wednesday - lasagna at the church/leftovers at home - Dinner was included in the Mutual activity
Thursday - Chicken Stroganoff - Moved from Tuesday to Thursday
Friday - Cheeseburger Pizza - Amazingly, I stuck to the original plan!
Saturday - pizza at the church/leftovers at home - This time pizza was served before the Priesthood session of general conference, giving us a chance to finish off the chicken stroganoff at home.

Having a plan, yet being flexible, Works for Me!
